Ingredients
4 tbsp or 56g Butter
1 tbsp or 15ml Olive Oil
8oz Button Mushrooms - 1 box - Chopped
2 sprigs of Thyme
3 tbsp or 24g Flour
2 cups or 500ml Beef Broth
1 tsp Soy Sauce
1/2 tsp Sugar
1 tsp Dijon Mustard
Preparation
1.To a saucepan over high heat, add 1 tbsp of butter and 1 tbsp of vegetable oil. Once the butter starts to brown, add the mushrooms. Once tender, add a sprig of fresh thyme and cook the mushrooms until golden brown.
2.Make a well in the center of the pan and add 3 tbsp or 42g butter. Turn the heat to medium and melt the butter down, then add the flour. Mix the flour into the butter, then combine with the mushrooms and cook for 2 to 3 minutes.
3.Pour in beef broth, stirring and scraping the sides and bottom of the pan to release any bits into the liquid. Add the soy sauce and bring to a simmer over medium heat and reduce down until it is as thick as you like.
4.Once thick, turn the heat to low and add granulated sugar and Dijon mustard, stir. Remove the thyme sprigs. Taste and adjust the seasoning as needed – add salt and pepper.
