Ingredients

  • 1 finely minced shallot

  • 1 tbsp or 14g butter

  • 1 cup or 250ml Madeira wine

  • 1.5 oz or 42.5g pack of demi-glace

  • 1 cup or 250ml beef broth

  • 2 tbsp or 28g cold butter cut into cubes

Preparation

1. Place the butter in a sauce pan over medium to high heat and melt it down.  Add the minced shallot and cook until tender and has a touch of brown.


2. Deglaze the pan with Madeira wine, bring to a simmer and reduce it by ¾.


3. Add the beef or veal demi-glace to the pan, whisk it into the madeira mixture and then pour in the beef broth.  Bring the sauce back to a simmer and reduce until it’s as thick as you like.


4. Take the sauce off heat and add 2 tbsp of cubed cold butter, mix it in by swirling the pan or stirring with a spoon.


5. Taste and adjust the seasoning, add salt of pepper if needed.
