Ingredients

  • 2 tbsp or 27g Butter

  • 2 tbsp or 27g Flour

  • 1.5 cups or 375ml Milk

  • 8oz or 226g Cream Cheese

  • 2 cups or 226g Mild Cheddar Cheese

  • 1/4 tsp Garlic Powder

  • 1/8 tsp Cayenne Pepper – add more if you like it really spicy

  • 1/8 tsp Black Pepper

  • Dash of Salt to taste

  • 3/4 cup or 188ml Buffalo Wing Hot Sauce

  • 4-5 cups or 3 Chicken Breast – Shredded

  • 3.5 cups or 454g Dry Macaroni

 

Baked Buffalo Chicken Mac N Cheese Version:

  • 2 tbsp or 30ml Buffalo Wing Hot Sauce

  • 1/2 cup or 57g Mild Cheddar Cheese

Preparation

1.Begin by poaching and shredding 3 chicken breasts. Alternatively, you can use rotisserie chicken for convenience. Cook the pasta according to the manufacturer’s instructions.

 

2.To create the cheese sauce: Add 2 tbsp of butter to a high-sided saucepan over medium heat. Allow the butter to melt, then add the flour. Mix the butter and flour together and cook for 2 to 3 minutes.

 

3.Pour in the milk and whisk continuously until the mixture thickens. Reduce the heat to low and add the cream cheese. Whisk until the cream cheese is fully incorporated into the sauce. Next, add the cheddar cheese and stir until it's well combined.

 

4.Introduce the flavors: Add the garlic powder, cayenne pepper, black pepper, salt, and 3/4 cup or 188ml of buffalo wing hot sauce to the sauce. Stir until the mixture becomes smooth and cohesive over low heat.

 

5.Incorporate the chicken: Add the shredded chicken to the sauce and mix well. Then, introduce the cooked macaroni and stir until everything is evenly combined.

 

6.For baked mac and cheese: Transfer the mac and cheese into a baking dish. Drizzle 2 tbsp or 30ml of buffalo wing hot sauce over the top for an extra kick. Sprinkle on 1/2 cup or 57g of cheddar cheese to enhance the cheesy goodness.

 

7.Bake time: Preheat your oven to 350˚F or 176˚C. Place the baking dish in the oven and bake for 15 to 20 minutes, or until the cheese on top is a light golden brown.
